There are moments at The Jackson Ranch that feel less like an event, and more like a scene you’ve stepped into.
This Easter, our pop-up restaurant with Whispering Angel transformed the Ranch into something altogether softer. A gentle wash of blush tones, cascading florals and the unmistakable ease of a Provençal afternoon set the tone for an experience that was both elevated and effortlessly relaxed.
From the moment guests arrived, it was clear this was not just a lunch or dinner booking, but an atmosphere. Pink linen deck chairs nestled into the greenery, custom glassware and delicate branding details and a bar framed by sculptural floral installations created a setting that felt intimate, considered and quietly luxurious.
At the centre of it all was Whispering Angel. Known for its delicate notes of wild strawberry, soft citrus and a long, silky finish, the rosé brought a sense of lightness to the entire experience, pairing seamlessly with the menu and the mood of the day.
The menu itself was designed to feel generous yet refined. Guests moved from delicate starters like scallop crudo with Sunrise lime and tarama, to richer, more indulgent dishes including the 18-hour BBQ beef short rib with aji verde, and snapper fillet with royal red prawn and buttermilk. It was a balance that felt both thoughtful and satisfying, grounded in flavour but elevated in execution.
And while every dish held its own, it was the overall experience that stayed with people.

Those words captured exactly what we hoped to create.
The florals, in particular, became a defining feature of the space. Layers of soft blush, cream and deep burgundy blooms framed the dining experience, spilling across tables and installations in a way that felt abundant yet intentional. They softened the structure of the space and drew everything together, echoing the elegance of the wine itself.
As the afternoon unfolded into evening, glasses of rosé caught the light, conversations lingered, and the Ranch settled into that familiar rhythm we love so much. Unhurried, welcoming, and quietly memorable.
This pop-up was a celebration of collaboration, seasonality and atmosphere. A reminder that when the details are right, from the menu to the setting to the feeling in the air, something simple can become truly special.
